Stuffed Baked Sweet Potatoes (Parental participation required)
Serve this wonderful vegetable with ham steaks or pork chops.
You will need:
6 medium sweet potatoes
3 tablespoons butter
1 ( 8 ounce) can crushed pineapple
½ cup pecans
Wash your hands well and read all the directions.
1. Ask an adult to help you pre-heat the oven to 375°
2. Wash the sweet potatoes well and bake for 1 hour.
3. Cut the baked sweet potatoes in half.
4. Gently scoop the potato pulp out of the skin into a medium size bowl.
5. Drain the juice from the canned pineapple. Add the pineapple and butter to the bowl.
6. Beat until fluffy. Cut pecans with kitchen scissors until chopped.
7. Gently spoon back into potato shell and sprinkle with pecans.
8. Bake for 12 minutes at 375°.
