Farmer’s Market Side Dish (Parental supervision required)
With vegetables from the Farmer’s Market or your own garden this microwave side is easy and tasty. You can substitute Cottage cheese for the Ricotta cheese.
You will need:
1 pound Zucchini
¾ cup Ricotta cheese
2 green onions
½ teaspoon dried oregano leaves
¼ teaspoon salt
¼ teaspoon pepper
2 medium tomatoes
1 cup grated Cheddar cheese
Wash your hands well and read all the directions.
1. Cut off the very ends of the zucchini.
2. Slice the zucchini into rounds ¼ inch thick.
3. Lay the zucchini on the bottom of a shallow 11/2 quart microwave dish.
4. Cover the dish but leave a vent at one corner.
5. Microwave on HIGH about 5 minutes or until crisp and tender. Ask an adult to help you drain off all the liquid.
6.Stir in the Ricotta cheese, green onion, oregano, salt and pepper. Be sure to mix and spread out evenly.
7. With the help of an adult slice the tomatoes.
8. Carefully lay the tomatoes over the Ricotta cheese mixture.
9. Grate the Cheddar cheese and sprinkle evenly over the tomatoes.
10. Microwave, uncovered on HIGH about 4 minutes until heated through and the Cheddar cheese is melted.
Serve hot with crunchy bread. Don’t forget to spoon some of the juices over each serving.
